Prepare crust
Preheat the oven to 350°F (175°C). Lightly grease a 9-inch pie pan or springform pan. Place the chocolate sandwich cookies in a food processor and pulse until they are fine crumbs. Stir the cookie crumbs with melted butter and granulated sugar in a bowl until evenly moistened. Press the crumb mixture firmly and evenly into the bottom and up the sides of the prepared pan using the back of a measuring cup or your fingers to create a compact crust.

Bake the crust for 8–10 minutes until set and fragrant. Remove from oven and let cool completely on a wire rack. If you prefer a no-bake version, chill the pressed crust in the refrigerator for 30–45 minutes instead of baking.

Make chocolate ganache
Place the chopped semisweet chocolate in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer (do not boil). Pour the hot cream over the chopped chocolate and let sit for 1–2 minutes to soften. Whisk until the mixture is smooth and glossy. If using instant coffee, stir it into the ganache now to dissolve. Set aside to cool slightly, stirring occasionally so it thickens but remains pourable.

Prepare cream cheese layer
While the ganache cools, beat the softened cream cheese in a bowl with an electric mixer until smooth. Add the powdered sugar and vanilla extract and beat until fully combined and fluffy. Fold about 1/2 cup of the whipped cream into the cream cheese mixture to loosen it (reserve remaining whipped cream for topping). This creates a light mousse layer that will sit between the crust and ganache.

Assemble the filling: Spread the cream cheese mixture evenly over the cooled crust. Pour the slightly cooled ganache over the cream cheese layer, smoothing the top with an offset spatula so it reaches the edges. The ganache should form a glossy, thick layer. Tap the pan gently on the counter to remove air pockets and level the top.

Chill the pie in the refrigerator for at least 3 hours (preferably 4–6 hours or overnight) so the ganache and cream cheese layers set firmly.

When the pie is fully chilled, spread the remaining whipped cream in a decorative layer over the chilled ganache or pipe into swirls, as desired. Drizzle chocolate sauce or hot fudge over the whipped cream. Sprinkle chocolate shavings or dust lightly with cocoa powder. If you like a contrast, finish with a few sea salt flakes scattered across the top.

Return the assembled pie to the refrigerator for 15–30 minutes to let the toppings settle. Slice with a warm, dry knife (wipe between slices) for clean pieces. Serve chilled.
