Pound and season
Trim any visible fat from the chicken breasts. If breasts are thick, place each between two sheets of plastic wrap and gently pound with a meat mallet or rolling pin to an even thickness of about 3/4 inch.

Marinate
In a shallow dish, whisk together 2 tbs olive oil, 1 tbs lemon juice, 1 tsp minced garlic, 1 tsp Dijon mustard, 3 tsp salt, and 1 tsp black pepper. Add the chicken, turning to coat both sides. Cover and refrigerate for at least 20 minutes and up to 2 hours.

Cook
Heat 1 tbs extra-virgin olive oil in a large skillet over medium-high heat until shimmering. Remove chicken from marinade and shake off excess. Cook chicken 4–6 minutes per side (depending on thickness) until a golden crust forms and internal temperature reaches 74°C (165°F). Transfer to a cutting board and let rest 5 minutes, then slice into thin strips or bite-sized pieces.
Caesar dressing

Prepare anchovies and garlic
In a medium bowl, mash the chopped anchovy fillets with the minced garlic using the back of a spoon or a small fork until it forms a paste.

Mix dressing
Add 1 cup mayonnaise, 2 tbs fresh lemon juice, 1 tsp Dijon mustard, 1 tsp Worcestershire sauce, and 3 tbs grated Parmesan to the anchovy-garlic paste. Whisk until smooth. Taste and add black pepper to taste. If the dressing is too thick, whisk in up to 2 tsp water, 1 tsp at a time, to reach desired consistency.

Toss lettuce
Place 6 cups chopped Romaine lettuce in a large bowl. Add about half of the prepared Caesar dressing (start with 3–4 tbs and add more to taste) and toss gently to coat the leaves evenly.

Add cheese and croutons
Sprinkle 3 tbs freshly grated Parmesan and 1 cup croutons over the dressed lettuce. Toss lightly to combine.

Top with chicken
Arrange the sliced cooked chicken over the dressed Romaine. Drizzle any resting juices from the cutting board over the chicken for extra flavor. If desired, add a light sprinkle of red pepper flakes.

Finish and serve
Serve immediately with lemon wedges on the side for squeezing over each portion. Offer additional Parmesan and dressing at the table.
