Pork Ribs & Marinade

For Serving (Kid-friendly sides and garnish)

Method

Pork Ribs & Marinade

  1. 1

    Prep the ribs

Preheat oven to 300°F (150°C). Pat the ribs dry with paper towels. If the ribs are a full rack, cut into smaller kid-size portions (about 3–4 bone sections each). Remove any large membrane from the back of the ribs if present by slipping a knife under the membrane and pulling gently with a paper towel.

  2. 2

    Make the kid-friendly sauce

In a medium bowl, whisk together ketchup, brown sugar, honey, apple cider vinegar, apple juice, mild BBQ sauce, melted butter, salt, black pepper (if using), garlic powder, and paprika until smooth and slightly glossy. Taste and adjust sweetness or tang to be mild and kid-pleasing.

  3. 3

    Coat and braise

Place the rib portions meaty-side up in a single layer in a baking dish or rimmed sheet pan. Brush or pour about half of the sauce over the ribs, turning pieces to coat. Pour 1/4 cup additional apple juice into the bottom of the dish (this keeps ribs moist). Cover tightly with aluminum foil.

  4. 4

    Bake low and slow

Bake covered for 1 hour and 30 minutes to 1 hour and 45 minutes, until the meat is tender and pulls back slightly from the bone ends. Check after 1 hour 15 minutes: if a toothpick or fork slides in with little resistance the ribs are done enough for kids.

  5. 5

    Finish with glaze

Remove foil, brush ribs with remaining sauce, and increase oven temperature to 425°F (220°C) or switch to broil on low. Return ribs uncovered for 8–10 minutes, watching closely, until the glaze is sticky and slightly caramelized but not burnt. If broiling, keep oven door open a crack and watch constantly to avoid burning.

  6. 6

    Rest and portion

Remove ribs from oven and let rest for 5 minutes. Slice any larger portions into single-rib pieces if needed for small hands. Spoon any pan juices over the ribs before serving.

Serving & Sides

  1. 7

Warm the soft rolls or buns in the oven for 3–5 minutes while ribs finish glazing so they are soft for little hands.

  2. 8

Plate 2–3 single-rib pieces per child (adjust by appetite). Add a small scoop of steamed baby carrots and a handful of apple slices. Place a little extra sauce on the side for dipping if desired.

  3. 9

Offer napkins and a wet wipe — ribs can be fun but messy. Serve slightly warm, ensuring pieces are cooled enough for a child to eat safely.
