Prep

    Bring chicken to room temperature

    Remove the half chicken from the refrigerator 30–45 minutes before cooking so it comes closer to room temperature. Pat the skin and cavity dry with paper towels—dry skin crisps better.

    Preheat the oven to 425°F (220°C). Position a rack in the center of the oven.

Make the Marinade / Rub

    In a small bowl, combine olive oil, lemon zest, lemon juice, minced garlic, paprika, dried oregano, honey, red pepper flakes (if using), kosher salt, and black pepper. Whisk until emulsified.

    Taste the mixture briefly and adjust salt or lemon if needed. The mixture should be slightly bright and balanced—this will season and help brown the skin.

Apply to Chicken

    Place the half chicken on a cutting board, skin side up. Using your hands or a brush, rub about three-quarters of the marinade over the skin, making sure to coat the breast and thigh evenly. Tuck any wing tips under the bird so they don't burn.

    Flip the bird and rub the remaining marinade under the skin where possible (between skin and meat) and on the cavity side. Pat any excess marinade off the exterior skin so it can brown properly.

    Brush the melted butter (or additional olive oil) over the skin to promote browning. Place the fresh thyme or rosemary sprigs beside or under the chicken in the roasting pan and squeeze the halved lemon over the chicken; place halves in the pan.

Roast

    Place the half chicken on a wire rack set inside a rimmed baking sheet or in a roasting pan skin side up. Roast at 425°F (220°C) for 35–45 minutes, depending on the size of the half chicken (total weight ~1–1.5 lbs).

    Start checking at 30 minutes: pierce the thickest part of the thigh (not touching bone) with an instant-read thermometer. The chicken is done when the thickest part of the thigh reaches 165°F (74°C) and the juices run clear. The skin should be golden and crisp.

    If the skin is browning too quickly before the interior reaches temperature, loosely tent the bird with foil and continue roasting until done.

Rest and Finish

    Remove the chicken from the oven and transfer to a cutting board. Spoon any pan juices over the top and cover loosely with foil. Let rest for 8–10 minutes to allow juices to redistribute.

    After resting, carve the half chicken into breast and leg portions if desired. Squeeze the roasted lemon halves over the meat and sprinkle chopped parsley for color.

    Serve warm with pan juices on the side or spooned over the chicken.
