Prepare the Tomatoes
In a medium saucepan, heat the groundworks tomatoes over medium heat. Simmer for about 10 minutes, allowing the flavors to meld and the sauce to thicken slightly. Season with salt and black pepper to taste.

Mix the Ricotta
In a mixing bowl, combine the ricotta cheese, half of the basil leaves (chopped), and half of the grated Pecorino Romano cheese. Mix until well combined.

Assemble the Dish
In a serving dish, layer the tomato sauce at the bottom. Spoon dollops of the ricotta mixture over the sauce. Drizzle with extra virgin olive oil and sprinkle the remaining Pecorino Romano cheese on top.

Garnish and Serve
Garnish with the remaining fresh basil leaves and serve warm. Enjoy your fresh tomato dish!
