Steak Preparation

    Sear the Tenderloin

    Heat olive oil in a skillet over medium-high heat. Season the beef tenderloin with salt and black pepper. Sear the tenderloin for 4-5 minutes on each side until a nice crust forms. Remove from heat and let it rest.

Braised Onions and Mushrooms

    Prepare the Braise

    In the same skillet, add butter and melt it. Add cioppolini onions and sauté until golden. Add the wild mushrooms and cook until softened. Pour in marsala wine and chicken broth, add thyme, and bring to a simmer. Cook for about 15-20 minutes until the sauce reduces.

Housecut Fries

    Fry the Potatoes

    Cut the potatoes into fries and soak in water for 30 minutes. Drain and pat dry. Heat oil in a deep fryer to 350°F (175°C). Fry the potatoes in batches until golden brown and crispy. Season with salt.

Smoked Gorgonzola Compound Butter

    Make the Compound Butter

    In a mixing bowl, combine softened unsalted butter, smoked gorgonzola, minced garlic, and chopped parsley. Mix well until fully combined. Chill in the refrigerator until ready to serve.

Assembly

    Plate the Dish

    On a plate, place the seared tenderloin, top with braised onions and mushrooms, serve with housecut fries on the side, and a dollop of smoked gorgonzola compound butter on top of the steak.
