Cooking Instructions

  1. 1

    Cook the Linguine

Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the linguine.

  2. 2

    Sauté the Shrimp

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the shrimp and season with salt and black pepper. Cook until the shrimp are pink and opaque, about 3-4 minutes. Remove from skillet and set aside.

  3. 3

    Prepare the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, anchovy fillets, and chili flakes. Sauté for 1-2 minutes until fragrant. Then add the zucchini and summer squash, cooking until tender, about 5-7 minutes.

  4. 4

    Combine Ingredients

Return the cooked shrimp to the skillet. Add the drained linguine and toss to combine. If the pasta seems dry, add a little reserved pasta water. Stir in the fresh herbs and lemon juice, adjusting seasoning with salt and pepper as needed.

  5. 5

    Serve

Plate the linguine and garnish with toasted walnuts and additional fresh herbs. Serve immediately.
