Cannoli Preparation

    Make the Cannoli Shells

    In a large bowl, mix together the flour, sugar, cocoa powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in egg yolk, wine, and enough water until dough comes together. Knead on a floured surface until smooth. Wrap in plastic wrap and let rest for 30 minutes.

    Roll and Cut the Dough

    After resting, roll out the dough to about 1/8 inch thick. Cut into circles (3-4 inches in diameter).

    Form the Shells

    Wrap each circle around a cannoli form and seal the edges with a little water. Repeat with remaining dough.

    Fry the Shells

    Heat oil in a deep skillet to 350°F (175°C). Fry the shells until golden brown, about 2-3 minutes. Remove and drain on paper towels. Let cool before removing from forms.

    Prepare the Filling

    In a medium bowl, mix ricotta cheese (about 2 cups), powdered sugar (1 cup), vanilla extract (1 tsp), and mini chocolate chips (1/2 cup) until smooth.

    Fill the Shells

    Using a piping bag, fill each cooled shell with the ricotta mixture.

    Garnish

    Dip each end of the filled cannoli in chopped toasted pistachios and additional chocolate chips if desired.
