Prepare the Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Make the Dough
In a large mixing bowl, combine all-purpose flour, salt, and Italian seasoning. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Add more flour if necessary.

First Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for 1 hour or until doubled in size.

Shape the Focaccia
After rising, punch down the dough and transfer it to a greased baking sheet. Stretch it out to fit the sheet and use your fingers to create dimples on the surface.

Add Toppings
Drizzle with olive oil and sprinkle with chopped rosemary and coarse salt.

Second Rise
Cover the focaccia and let it rise for another 30 minutes.

Preheat the oven to 400°F (200°C) and bake for 20-25 minutes until golden brown.
