Prepare the New Potatoes

In a pot, cover the new potatoes with water and add a pinch of salt. Bring to a boil and cook until tender, about 15-20 minutes. Drain and set aside.

Sear the Scallops

Pat the scallops dry with paper towels and season both sides with salt and black pepper. Heat olive oil in a large skillet over medium-high heat. Add the scallops to the pan and sear for about 2-3 minutes on each side, or until golden brown and cooked through. Remove from heat and let rest.

Prepare the Vinaigrette

In a small bowl, whisk together truffled honey, lemon juice, and a pinch of salt and pepper to taste.

Assemble the Dish

On a plate, arrange a bed of baby greens. Place the cooked new potatoes beside the greens. Top with the seared scallops and drizzle the truffled honey vinaigrette over the entire plate.
