Prepare the Shrimp and Sausage Mixture

In a large skillet over medium heat, add the diced Andouille sausage and cook until browned, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant. Add the Gulf shrimp and cook until they turn pink and opaque, about 3-4 minutes. Remove from heat and let cool slightly.

Mix Ingredients

In a large bowl, combine the cooked shrimp and sausage mixture, cooked rice, chopped green onions, beaten egg, salt, black pepper, and cayenne pepper. Mix well until all ingredients are evenly incorporated.

Form the Croquettes

Using your hands, form the mixture into small patties or croquettes, about 2 inches in diameter. Roll each croquette in breadcrumbs to coat evenly.

Fry the Croquettes

In a deep skillet or fryer, heat the olive oil to 350°F (175°C). Fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Serve the croquettes warm with goat cheese and rosemary jelly on the side.
