Prepare shaker
If using an egg white, add the bourbon, orange liqueur, lemon juice, grapefruit juice, simple syrup, bitters, and egg white to a cocktail shaker (no ice yet).

Dry shake (if using egg white)
Firmly seal the shaker and shake vigorously for 10–15 seconds to emulsify the egg white and create foam.

Add ice and shake
Open the shaker, add a handful of ice (large cubes preferred), reseal, and shake again for 12–15 seconds until the shaker is cold to the touch and well chilled.

Rim the glass (optional)
Run the grapefruit wedge around the rim of an old-fashioned or rocks glass. Dip the rim briefly into coarse sugar or crushed graham cracker to coat lightly.

Strain and serve
Strain the cocktail through a fine mesh strainer into the prepared glass over a large ice cube or sphere. The fine strain will catch any small ice shards and egg white solids for a smooth texture.

Express the oils from the grapefruit twist over the drink by pinching it skin-side down above the surface, then drop the twist into the glass or hang it on the rim. Optionally, add the grapefruit wedge alongside the twist.

Serve immediately while chilled. If you prefer no egg white, omit the dry-shake steps and simply combine ingredients with ice and shake once before straining.
