Smoked Salmon Cucumber Bites

    Prepare cucumber

    Trim the cucumber ends and slice into 1/2-inch rounds. Pat slices dry with a paper towel to remove excess moisture so toppings don't slide off.

    Make herbed cream cheese

    In a small bowl, combine the softened cream cheese, 1 tsp chopped dill, lemon zest, and 1/4 tsp freshly ground black pepper. Mix until smooth and spreadable. Taste and adjust salt/pepper if needed.

    Spread about 1/2 tsp of the herbed cream cheese onto each cucumber round. Top each with a folded piece of smoked salmon (about 3/4 inch piece). Garnish with a few capers and a sprinkle of remaining dill and black pepper. Arrange on a platter and refrigerate until serving.
