Veal Chops

Temper and season
Remove veal chops from refrigerator 30–45 minutes before cooking to come to near room temperature. Pat dry with paper towels. Season both sides and the exposed bone generously with kosher salt and freshly ground black pepper (use the 2 tsp salt and 1 tsp pepper listed).

Sear and roast
Preheat oven to 400°F (200°C). Heat a heavy oven-safe skillet (cast iron preferred) over medium-high heat until very hot. Add 2 tbs neutral oil. When oil shimmers, add veal chops, presentation side down first, and sear undisturbed 2–3 minutes until a deep golden crust forms. Flip and sear the other side 1–2 minutes. Add 2 tbs unsalted butter, 4 thyme sprigs, and 2 lightly crushed garlic cloves to the pan. Baste the chops with the melted butter for 30 seconds, then transfer skillet to the preheated oven. Roast 6–10 minutes depending on thickness for medium-rare to medium (internal temp 130–140°F / 54–60°C). Remove chops to a warm plate, tent loosely with foil and rest 6–8 minutes.

Finish
While chops rest, spoon some of the Mushroom Bourguignon sauce over and under the meat when plating. Reserve juices from resting in the pan to add to sauce if desired.
Mushroom Bourguignon Sauce (Bordelaise-style base)

Prepare mushrooms
Slice or quarter mushrooms so pieces are uniform. Pat dry if necessary to avoid excess moisture.

Sauté aromatics and mushrooms
In a medium sauté pan over medium heat, melt 2 tbs unsalted butter with 1 tbs olive oil. Add the finely chopped shallots and cook 2–3 minutes until translucent. Add 2 minced garlic cloves and cook 30 seconds until fragrant. Increase heat to medium-high and add mushrooms in a single layer if possible. Sauté without crowding so they brown, 5–7 minutes, stirring occasionally until liquid released has mostly evaporated and mushrooms have golden edges.

Add stock and aromatics
Add 1 cup beef or veal demi-glace (or reduced beef stock), 2 sprigs fresh thyme and 1 bay leaf. Simmer gently 8–12 minutes until sauce coats the back of a spoon and flavors concentrate. Taste and adjust seasoning with about 1 tsp salt and 1/2 tsp black pepper.

Mount with butter and finish
Remove thyme sprigs and bay leaf. Lower heat to very low. Off heat, whisk in 2 tbs cold unsalted butter, one piece at a time, to create a glossy, slightly thickened emulsion (this is mounting). Stir in 1 tbs chopped fresh parsley. Keep sauce warm until plating. If sauce is too thin, reduce a few more minutes; if too thick, loosen with a tablespoon of warm stock or water.

Make tomato basil oil
In a blender or using an immersion blender, combine 1 cup seeded and finely chopped Roma tomatoes, 1 cup packed fresh basil leaves, 1/2 cup extra-virgin olive oil, 1/2 tsp fine sea salt, and 1 tsp fresh lemon juice. Blend until very smooth and bright green-red. Taste and adjust salt or lemon. Optionally strain through a fine sieve for a silky oil (press solids to extract as much flavored oil as possible). Transfer to a small squeeze bottle or spoon for plating.

Plate the Veal Chop Royale
Place a warmed plate in front of you. Spoon a generous pool (about 2–3 tbs) of the Mushroom Bourguignon sauce in the center. Set a rested veal chop on top or leaning against the bone for visual height. Spoon additional sauce over the meat. Drizzle tomato basil oil in a decorative line or dots around the sauce (about 1–2 tbs total per plate). Garnish with a small handful of microgreens or baby arugula and a sprinkle of finely chopped parsley. Serve immediately so chops remain warm.
