Build and shake
Combine 2 oz Flor de Caña aged rum, 1.5 oz fresh pineapple juice, 0.5 oz allspice dram, 0.5 oz crème de banana, 0.5 oz fresh lime juice, 0.25 oz demerara (or rich simple) syrup and 2 dashes Angostura bitters into a cocktail shaker. Add 1 cup of ice to the shaker.

Agitate
Shake vigorously for 12–15 seconds until the shaker is very cold and you feel thick condensation. This both chills and dilutes the cocktail to balance the banana and allspice flavors with the rum and pineapple.

Strain
Double-strain the mixture into a chilled coupe or a tiki mug filled with crushed or block ice using a Hawthorne and fine mesh strainer to remove small ice chips and pineapple pulp for a smooth texture.

Place a dehydrated pineapple wheel or fresh pineapple wedge on the rim of the glass.

Grate a light dusting of toasted nutmeg or a single whole allspice berry cracked over the top to release aromatic oils. Serve immediately.
