Prepare ingredients
Preheat oven to 400°F (200°C). Drain and quarter the artichoke hearts. If crawfish are frozen, thaw in refrigerator and pat dry. Grate the Gruyère and Parmesan; slice roasted red peppers into thin strips if not already sliced.

Sauté aromatics
In a 10-inch skillet over medium heat, melt 2 tablespoons unsalted butter. Add the minced shallot and sauté 2–3 minutes until softened and translucent. Add the minced garlic and cook 30–45 seconds more until fragrant, taking care not to brown.

Make a light roux
Sprinkle the 2 tablespoons flour over the softened shallot and garlic and stir continuously for 1 minute to cook the raw flour taste. The mixture should bubble lightly but not darken significantly.

Add milk and cream
Gradually whisk in 1 cup milk until smooth, then add 1 tablespoon heavy cream. Continue whisking and bring the mixture to a gentle simmer over medium-low heat until it thickens to a cream sauce that coats the back of a spoon (about 2–4 minutes). Reduce heat if the sauce starts to separate.

Season and finish sauce
Stir in 1 tablespoon Antoine's Sauce Colbert (or hollandaise substitute), 1/2 teaspoon Dijon, 1 teaspoon lemon juice, 1/4 teaspoon Worcestershire, 1/8 teaspoon cayenne, 3/4 teaspoon kosher salt, and 1/2 teaspoon black pepper. Taste and adjust seasoning carefully (Antoine's Sauce Colbert is rich and salty; add more lemon if it needs brightness).

Fold in main components
Remove sauce from heat and fold in the 2 cups crawfish tails, 1 cup quartered artichoke hearts, and 1 cup sliced roasted red pepper until everything is evenly coated. Reserve about 1/4 cup of grated Gruyère to sprinkle on top later. If filling seems too loose, allow it to cool 5 minutes — it will thicken slightly.

Divide the crawfish-artichoke mixture into 6 individual au gratin dishes (about 6-ounce ramekins) or one medium baking dish for sharing. Smooth the tops so cheese adheres evenly.

Top with cheeses
Sprinkle the reserved 1/4 cup Gruyère evenly over the filled dishes, then top with the remaining Gruyère and the 1/4 cup Parmesan, spreading into an even layer.

Prepare breadcrumb crust
In a small bowl, combine 1/2 cup panko breadcrumbs with 1 teaspoon olive oil and 1 teaspoon melted butter; toss until crumbs are evenly moistened. Sprinkle the breadcrumb mixture over the cheese layer to create a crisp topping.

Bake
Place the ramekins on a rimmed baking sheet and bake in the preheated 400°F (200°C) oven for 12–15 minutes, until the cheese is bubbly and the breadcrumb topping is golden brown. For a more browned top, finish with 1–2 minutes under the broiler—watch carefully to avoid burning.

Garnish
Remove the au gratin dishes from the oven and let rest 3–4 minutes. Sprinkle 1 tablespoon finely snipped fresh chives over each dish for color and a mild onion note.
