Crabmeat Crust

Prepare crab mixture
Gently pick through the Louisiana blue crab meat to remove any shell fragments. In a medium bowl combine crab meat, panko breadcrumbs, melted butter, mayonnaise, Dijon mustard, chopped parsley, chives, lemon zest, salt, and black pepper. Fold gently to combine without breaking up the lumps of crab. Taste and adjust seasoning if needed. Add 1 tsp truffle oil and fold lightly to distribute aroma.

Form crust
Divide the crab mixture into two even portions. Shape each portion into a flat patty roughly the same size as the top of each redfish fillet (about 3–4 inches diameter). Press the crab mixture gently so it holds together; place on a plate and refrigerate while you prepare the fish for at least 10 minutes to firm up.

Season and dust
Pat the redfish fillets dry with paper towels. Season both sides lightly with the indicated salt and pepper. Lightly dust the flesh side (not the skin side) with 1 tablespoon of flour each, shaking off excess. This helps the crust adhere.

Pan-sear fillets
Heat a large skillet over medium-high heat until hot. Add olive oil and 1 tbsp butter. When butter foams and oil shimmers, place the fillets skin-side down. Press lightly with a spatula for 10–15 seconds to prevent curling. Cook skin-side down for 3–4 minutes until the skin is crisp and the fish is cooked about two-thirds of the way through.

Add crab crust and finish
Carefully flip each fillet so the flesh side is up. Remove the pan briefly from heat, place a prepared crab patty onto the flesh of each fillet, pressing to adhere. Return pan to low–medium heat, add the remaining 1 tbsp butter around the fillets, cover loosely with a lid, and cook for 2–3 minutes more until the crab is warmed through and lightly golden, and the fish reaches an internal temperature of about 130–135°F (54–57°C) for moist, flaky redfish. Avoid overcooking. Transfer fish to a warm plate.

Cook rice
Add the rice to the onion and stir to coat the grains with butter for 1 minute. Pour in 2 cups of warmed chicken or seafood stock, bring to a gentle boil, then reduce heat to low, cover, and simmer undisturbed for 15–18 minutes (or until liquid is absorbed and rice is tender). Remove from heat and let rest covered for 5 minutes, then fluff with a fork and stir in chopped parsley if using. Adjust salt and pepper to taste.

Taste for seasoning and finish. Place a portion (about 1/2 cup) of onion rice onto each warmed plate, top with a crabmeat-crusted redfish fillet (skin-side down if desired for presentation). Drizzle a very light amount (about 1/4–1/2 tsp) of truffle oil over each crab crust to enhance aroma — do not overdo it. Garnish with microgreens or parsley and serve with a lemon wedge alongside for squeezing.

Serve immediately while fish skin remains crisp and crab topping is warm. Leftovers: store components separately in the refrigerator for up to 2 days; reheat gently in a low oven to avoid drying the fish.
