Dough Preparation

Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Gradually mix the flour into the eggs using a fork until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until the dough is smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a medium bowl, combine ricotta cheese, grated Parmesan cheese, chopped parsley, salt, and ground black pepper. Mix well until all ingredients are combined.

Roll Out the Dough
After resting, roll out the dough on a floured surface to about 1/8 inch thick. Cut into squares (about 3x3 inches).

Fill and Seal Ravioli
Place a teaspoon of the filling in the center of each square. Fold the dough over to form a triangle or rectangle and press the edges to seal. Use a fork to crimp the edges for extra security.

Prepare for Breading
In a shallow dish, beat the eggs and mix in the milk. Place breadcrumbs in another shallow dish.

Bread the Ravioli
Dip each ravioli in the egg mixture, allowing excess to drip off, then coat with breadcrumbs. Place on a parchment-lined baking sheet.

Heat the Oil
In a large pot, heat vegetable oil over medium heat until hot (around 350°F or 175°C).

Fry the Ravioli
Carefully add breaded ravioli in batches to the hot oil. Fry for about 3-4 minutes, turning occasionally, until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve hot with marinara sauce for dipping.
