Method
Burger Patties
Form patties
Divide the ground Angus beef into two equal portions (about 8 oz each). Gently form each portion into a round patty about 3/4 to 1 inch thick and slightly wider than the buns. Do not overwork the meat. Make a shallow indentation in the center of each patty with your thumb to help them cook flat.
Season both sides of each patty with kosher salt and freshly ground black pepper just before cooking.
Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Add 1 tablespoon oil and swirl to coat. Add the patties and cook undisturbed for 3-4 minutes until a browned crust forms. Flip and cook another 3-4 minutes for medium (adjust 1-2 minutes for rarer or longer for well-done). If using cheese, place a slice on each patty in the last 1 minute and cover the pan to melt.
Remove cooked patties to a plate and let rest for 2 minutes while you finish the buns and assemble.
Buns & Condiments
While patties rest, spread mayonnaise on the bottom half of each bun and spread mustard on the top half. If you prefer a different ratio, adjust to taste.
Toast buns (optional)
In a separate skillet over medium heat, melt 1 tablespoon butter and place cut-side-down buns to toast until golden, about 30–60 seconds. Remove from heat.
Toppings
Slice the tomato into 1/4-inch thick rounds. Slice the onion into thin rings. Remove large ribs from lettuce leaves if desired.
Assemble toppings on the buns: place 1-2 lettuce leaves on the mayo-spread bottom bun, add 2-3 tomato slices (season lightly with a pinch of salt if desired), place the cooked patty on top, add 4 pickle slices and a few onion rings, then cover with the mustard-spread top bun.
Optional Finishes
If using cheese, ensure it is added per the cooking step so it melts. Serve immediately while hot.
Cut the burger in half if desired and serve with fries or a side salad.
