    Prepare the Vegetables

    Wash and chop the fresh spinach, mushrooms, tomato, onion, and jalapeños into small pieces.

    Make the Chipotle Aioli (if not using store-bought)

    In a small bowl, mix together mayonnaise, chipotle peppers in adobo sauce, lime juice, and a pinch of salt to create the chipotle aioli.

    Sauté the Vegetables

    In a skillet over medium heat, add a splash of oil. Once heated, add the chopped onions and sauté until translucent, about 3-4 minutes. Add sliced mushrooms and jalapeños and cook for another 2-3 minutes. Finally, add the spinach and cook until wilted, about 2 minutes.

    Assemble the Quesadilla

    On one half of each flour tortilla, layer the sautéed vegetable mixture, diced tomato, shredded Monterey Jack cheese, and a drizzle of chipotle aioli. Fold the tortilla in half to cover the filling.

    Grill the Quesadilla

    In the same skillet, add a little more oil if necessary and place the folded quesadilla on the skillet over medium heat. Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.

Serving

    Serve the Quesadilla

    Cut the quesadilla into wedges and serve hot with a side of sour cream, guacamole, and house-made ranchero sauce.
