Lasagna Preparation

Prepare the Egg Mixture
In a large bowl, beat the eggs until well combined. Set aside.

Cook the Turkey Sausage
In a skillet over medium heat, cook the turkey sausage until brown and crumbled. Remove from heat and set aside.

Prepare the Veggies
Slice the tomatoes, mushrooms, and sun-dried tomatoes. Wash and dry the spinach and basil.
Béchamel Sauce Preparation

Add Milk and Season
Gradually whisk in the milk until smooth. Cook until the sauce thickens, about 5-7 minutes. Stir in nutmeg, salt, and black pepper. Remove from heat.
Assembly and Baking

Layer the Ingredients
In a greased baking dish, layer half of the egg mixture, followed by layers of sliced tomatoes, spinach, basil, sun-dried tomatoes, mushrooms, turkey sausage, and ricotta cheese.

Repeat Layers
Add another layer of the remaining egg mixture and repeat the layering process with the remaining ingredients.

Top with Béchamel and Cheddar
Pour the béchamel sauce over the top layer and sprinkle with shredded cheddar cheese.

Bake the Lasagna
Preheat the oven to 375°F (190°C). Bake the lasagna for 45-55 minutes or until set and golden on top.
