Preparation
- 1
Prepare the Dry Rub
In a bowl, combine paprika, brown sugar, cayenne pepper, black pepper, salt, garlic powder, and onion powder. Mix well to form a dry rub.
- 2
Prepare the Meat
Rub the dry rub onto the beef brisket and pork ribs, ensuring an even coating. Wrap the meat in plastic wrap and refrigerate for at least 4 hours (or overnight for best results).
Cooking
- 3
Preheat the Smoker
Preheat your smoker to 225°F (107°C). Use wood chips of your choice to add flavor.
- 4
Smoke the Meat
Place the brisket and ribs in the smoker. Smoke for approximately 6-8 hours, or until the meat reaches an internal temperature of 195°F (90°C) for brisket and 190°F (88°C) for ribs.
- 5
Prepare the Sauce
While the meat is smoking, combine the tomato sauce, apple cider vinegar, Worcestershire sauce, honey, and liquid smoke in a saucepan. Simmer over low heat for about 20 minutes, stirring occasionally.
- 6
Glaze the Meat
During the last hour of smoking, brush the sauce onto the brisket and ribs every 20 minutes.
Serving
- 7
Rest and Serve
Once the meat is cooked, remove it from the smoker and let it rest for 30 minutes. Slice the brisket against the grain and serve with ribs, coleslaw, and cornbread.
