    Prepare the Vegetables

    Preheat your oven to 400°F (200°C). Peel and dice the sweet potatoes into 1-inch cubes. Trim the ends of the Brussels sprouts and cut them in half. Slice the red onion into thin wedges.

    Mix with Olive Oil and Spices

    In a large mixing bowl, combine the sweet potatoes, Brussels sprouts, and red onion. Drizzle with olive oil and sprinkle with salt, black pepper, and garlic powder. Toss until all vegetables are evenly coated.

Roasting

    Roast the Vegetables

    Spread the vegetable mixture evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and the Brussels sprouts have browned edges, stirring halfway through.

Combine and Serve

    Mix in Dried Cherries

    Once the vegetables are roasted, remove them from the oven and add the dried cherries. Toss everything together gently.
