Chicken Preparation

Prepare the Chicken
If you prefer crispy chicken, heat oil in a pan over medium heat. Season the chicken breasts with salt, black pepper, paprika, and cumin. Cook on each side for about 6-7 minutes until golden brown and cooked through. For grilled chicken, preheat the grill and cook the seasoned chicken for 6-7 minutes on each side.

Make the Corn Salsa
In a medium bowl, combine corn, diced red onion, chopped cilantro, lime juice, salt, and diced jalapeño (if using). Mix well and set aside to let the flavors meld.

Assemble the Salad
In a large salad bowl, combine the chopped romaine lettuce, spring mix greens, diced tomatoes, and crumbled Cotija cheese. Add the tortilla strips on top.

Combine Everything
Slice the cooked chicken and place it on top of the salad. Spoon the corn salsa over the chicken and drizzle with the avocado ranch dressing. Toss gently to combine and serve immediately.
