Mix the Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Prepare the Wet Ingredients
In a separate bowl, combine the almond milk and apple cider vinegar. Let it sit for about 5 minutes to curdle. Then stir in the vanilla extract and vegetable oil.

Pour the wet ingredients into the dry ingredients. Gently stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.

Preheat the Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease with a little oil or cooking spray.

For each pancake, pour about 2 tablespoons of batter onto the skillet. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes on the other side until golden brown.

Repeat with the remaining batter, greasing the skillet as needed. You should get about 20 small pancakes.
