Method
French Toast Preparation

Mix Egg Batter
In a medium bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Prepare the Toast
Dip each slice of Texas toast into the egg batter, allowing it to soak for a few seconds on each side.

Cook the French Toast
In a large skillet, melt the butter over medium heat. Add the soaked Texas toast slices and cook for 3-4 minutes on each side until golden brown. Remove from heat and set aside.
Assemble the Monte Cristo

Layer the Ingredients
On two slices of the French toast, layer 2 slices of ham and 1 slice of Swiss cheese. Top with another slice of French toast to make a sandwich.

Heat the Sandwich
Return the assembled sandwiches to the skillet and cook for an additional 2-3 minutes on each side or until the cheese is melted and the bread is golden.
Raspberry Melba Sauce Preparation

Cook the Raspberries
In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat for about 5-7 minutes, stirring occasionally until the raspberries break down and the sauce thickens slightly.

Strain the Sauce
Once cooked, strain the sauce through a fine mesh sieve to remove seeds, if desired. Set aside.
