Vegetable Preparation

    Prepare the Vegetables

    Preheat your oven to 400°F (200°C). Chop the cauliflower, broccoli, carrots, cabbage, radishes, and beets into bite-sized pieces. Place them in a large mixing bowl.

    Season the Vegetables

    Mince the garlic and grate the ginger. Add olive oil, minced garlic, grated ginger, salt, and black pepper to the bowl of vegetables. Toss everything until the vegetables are evenly coated.

    Roast the Vegetables

    Spread the seasoned vegetables evenly on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through.

Rice and Potatoes Preparation

    Cook the Brown Rice

    In a saucepan, bring 2 cups of water to a boil. Add 1 cup of brown rice. Cover, reduce the heat to low, and simmer for about 40-45 minutes or until the rice is tender and water is absorbed. Fluff with a fork.

    Prepare the Red Skin Potatoes

    Wash and chop the red skin potatoes into quarters. Boil them in salted water for about 15-20 minutes, or until fork-tender. Drain and set aside.

Assembly

    Assemble the Hash

    In a serving bowl, layer the cooked brown rice and red skin potatoes at the bottom. Top with the roasted vegetable mixture.

    Add Cheese and Sour Cream

    Sprinkle the Monterey Jack cheese over the top of the vegetables. Add a dollop of sour cream.

    Optional Avocado and Toast

    Slice the avocado and place it on top or beside the hash. Toast the slices of bread and serve alongside.
