Peel and Grate Potatoes
Peel the russet potatoes and use a box grater or food processor to grate them into thin shreds. Place the grated potatoes in a large bowl.

Rinse and Drain
Rinse the grated potatoes under cold water to remove excess starch. Drain well using a fine mesh strainer or cheesecloth. Pat them dry with paper towels to remove as much moisture as possible.

Seasoning
Add salt and pepper to the grated potatoes and mix thoroughly to ensure even seasoning.

Heat Oil and Butter
In a large skillet, heat the vegetable oil and butter over medium-high heat until shimmering and melted.

Cook Hash Browns
Add the grated potato mixture to the skillet in an even layer. Press down firmly with a spatula. Cook for about 4-5 minutes until the bottom is golden brown and crispy.

Flip and Finish Cooking
Carefully flip the hash browns using a large spatula, or by sliding them onto a plate and flipping them back into the skillet. Cook the other side for an additional 4-5 minutes until golden and crispy.
