Method
Potato Preparation
- 1
Peel and Cut Potatoes
Peel the russet potatoes and cut them into long, thin strips (about 1/4 inch thick).
- 2
Soak Potatoes
In a large bowl, combine the cut potatoes with 4 cups of cold water and 1 tsp of salt. Soak for at least 30 minutes to an hour to remove excess starch.
- 3
Drain and Dry Potatoes
After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
Frying
- 4
Heat Oil
In a large, heavy-bottomed pot or deep fryer, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C).
- 5
Fry Potatoes
Carefully add a batch of dried potato strips to the hot oil. Fry them for about 5-7 minutes or until they are golden brown and crispy. Avoid overcrowding the pot.
- 6
Remove and Drain
Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Sprinkle with salt to taste.
- 7
Repeat
Continue frying the remaining batches of potato strips in the same manner until all the fries are cooked.
