    Prepare the Ingredients

    Dice the red skin potatoes into small cubes, chop the green bell pepper and onion, and slice the mushrooms.

    Cook the Potatoes

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced red skin potatoes and cook for about 10-12 minutes, stirring occasionally, until they are tender and golden brown.

    Sauté the Vegetables

    Add the remaining tablespoon of olive oil to the skillet along with the chopped onion, green bell pepper, and sliced mushrooms. Season with garlic powder, salt, black pepper, and paprika. Cook for an additional 5-7 minutes until the vegetables are soft.

    Add the Corned Beef

    Stir in the hand-pulled corned beef and mix well with the vegetables. Cook for another 5 minutes, allowing the corned beef to heat through.

    Prepare Optional Toppings

    If desired, fry or poach the eggs in a separate pan while the hash is finishing cooking.
