Eggs

Method

Corned Beef Hash

  1. 1

    Cook the Potatoes

In a medium pot, add the diced red skin potatoes and cover with water. Bring to a boil and cook for about 10 minutes until fork-tender. Drain and set aside.

  2. 2

    Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes until the onions are translucent.

  3. 3

    Combine Ingredients

Add the cooked potatoes and shredded corned beef to the skillet. Season with salt, black pepper, and paprika. Stir well to combine and cook for an additional 5-7 minutes until everything is heated through and the edges are slightly crispy.

Eggs

  1. 4

    Cook the Eggs

In a separate skillet, melt butter over medium heat. Crack the eggs into the skillet. Cook to your preference: sunny-side up, over-easy, or scrambled, seasoning with salt and black pepper.

Toast

  1. 5

    Prepare the Toast

Toast the slices of bread in a toaster or on a skillet until golden brown.
