Preparing the Sandwich

    In a skillet over medium heat, cook the sausage patties for about 4-5 minutes on each side or until they are fully cooked through and browned.

    In the same skillet, crack the eggs and cook them sunny-side up or to your desired doneness. Season with salt and pepper.

    Prepare the Avocado

    While the eggs are cooking, cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it slightly with a fork and season with salt and pepper.

    Finely slice the green onions and set aside.

    Toast the English Muffins

    While the sausage and eggs are cooking, split the English muffins in half and toast them until golden brown.
