    Cook the Potatoes

    Wash and dice the red skin potatoes into small cubes. Boil them in salted water for about 10-12 minutes or until tender. Drain and set aside.

    Cook the Sausage

    In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked, about 5-7 minutes. Break it into smaller pieces as it cooks. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add a little oil if needed and sauté the diced onion, green bell pepper, and jalapeño for about 5 minutes until softened. Add the diced tomato and cook for another 2 minutes.

    Combine Ingredients

    In a large bowl, combine the cooked red skin potatoes, sausage, and sautéed vegetable mixture. Mix well to combine.

    Prepare Avocado

    Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into slices or cubes.

Assembly

    Assemble the Bowl

    In serving bowls, layer the potato and sausage mixture, then sprinkle with Monterey Jack cheese. Top with avocado slices and drizzle with chipotle aioli to taste.
