Prepare the Chicken
If using grilled chicken, preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, and black pepper on both sides.

Cook the Chicken
For crispy chicken, heat a skillet over medium heat, add olive oil, and cook the chicken breasts for about 6-7 minutes on each side or until they are cooked through and golden brown. For grilled chicken, place the seasoned chicken on the grill and cook for about 6-7 minutes on each side until fully cooked.

Prepare the Salad Base
While the chicken is cooking, chop the romaine lettuce into bite-sized pieces and place them in a large mixing bowl. Thinly slice the Brussels sprouts and add them to the bowl.

Add the Toppings
Once the chicken is cooked, allow it to rest for a few minutes, then slice it into strips. Add the sliced chicken on top of the salad mixture.

Add Parmesan and Crumbs
Sprinkle the shaved Parmesan cheese and gluten-free panko bread crumbs over the salad and chicken.
