Preparing the French Toast

    Prepare the Bread

    Preheat your griddle or skillet over medium heat. While it's heating, spread almond mascarpone cheese generously on one side of each slice of ciabatta bread.

    Grill the Bananas

    Slice the bananas in half lengthwise. Spray the skillet with a little cooking spray or melt a small amount of butter. Place the sliced bananas cut-side down on the skillet and grill for about 2-3 minutes until they are caramelized and golden.

    Cook the French Toast

    Dip the ciabatta slices (mascarpone side down) into the egg mixture (if using) or directly place them on the skillet. Grill for about 3-4 minutes on each side until golden brown and crispy.

    Add the Candied Pecans

    Once the French toast is cooked, remove it from the skillet and top each slice with candied pecans and grilled bananas.

Making the Caramel Sauce

    Combine Ingredients

    In a saucepan over medium heat, combine brown sugar, butter, and a pinch of salt. Stir until the mixture is smooth and bubbling.

    Add Cream and Rum

    Slowly whisk in the heavy cream and banana rum. Allow the sauce to simmer for 3-4 minutes until it thickens slightly.

    Serve

    Drizzle the warm banana rum caramel sauce over the French toast and serve it alongside your choice of cooked bacon or sausage.
