Biscuits

Preheat the Oven
Preheat your oven to 450°F (230°C).

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in Butter
Add the cold, cubed butter to the dry ingredients and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Add Buttermilk
Make a well in the center of the mixture and pour in the buttermilk. Stir until just combined.

Shape Biscuits
Turn the dough out onto a floured surface and gently knead it just until it comes together. Pat it into a 1-inch thick circle and cut out biscuits using a round cutter.

Bake
Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
Sausage Gravy

Brown the Sausage
In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled, about 5-7 minutes.

Make the Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for an additional 2 minutes to remove the raw flour taste.

Add Milk
Gradually whisk in the milk, ensuring there are no lumps. Cook until the gravy thickens, about 5-8 minutes.

Add black pepper and salt to taste. Mix well and keep warm until ready to serve.

Peel and dice the potatoes. Boil them in salted water until tender, about 10-15 minutes, then drain.
