Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Make Espresso Rub
In a medium bowl, mix together the brown sugar, ground espresso coffee, smoked paprika, cayenne pepper, black pepper, and salt until well combined.

Prepare Bacon
Lay the thick-cut bacon strips flat on the prepared baking sheet, ensuring they do not overlap.

Apply Rub
Generously sprinkle the espresso rub mixture over the bacon strips, ensuring both sides are evenly coated. Drizzle maple syrup over the top of the bacon for extra sweetness.

Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the bacon is crispy and caramelized. Keep an eye on it towards the end to prevent burning.
