Prepare the Filling

    Sauté the Vegetables

    In a skillet over medium heat, add a drizzle of olive oil. Once heated, add the diced onion and sliced mushrooms. Sauté for 3-4 minutes until the mushrooms are golden and the onions are translucent.

    Add Spinach and Tomato

    Add the fresh spinach and diced tomato to the skillet. Cook for an additional 2-3 minutes until the spinach is wilted. Season with salt and pepper to taste.

    Add Jalapeños

    Stir in the sliced jalapeños according to your heat preference. Remove the filling from heat and set aside.

Assemble the Quesadilla

    Layer the Ingredients

    On one half of the large flour tortilla, spread the chipotle aioli, then layer the sautéed vegetable mixture. Top with shredded Monterey Jack cheese.

    Fold and Grill

    Fold the tortilla over to cover the filling. In the same skillet, add a little more oil if needed and grill the quesadilla for 2-3 minutes on each side until the tortilla is golden brown and the cheese has melted.

Serve

    Slice and Plate

    Remove the quesadilla from the skillet and let it cool slightly. Slice into wedges and serve immediately with sides of sour cream, guacamole, and house-made ranchero sauce.
