Omelette Preparation

Prepare the Vegetables
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chopped bell peppers, onion, and sliced mushrooms. Sauté for about 5-7 minutes until the vegetables are soft and slightly caramelized. Season with salt and black pepper. Remove from heat and set aside.

Whisk the Eggs
In a mixing bowl, crack the eggs and whisk them together until well combined. Add a pinch of salt and black pepper to taste.

Cook the Omelette
In the same skillet, add the remaining tablespoon of olive oil over medium heat. Pour in the whisked eggs. Allow them to cook for about 2 minutes until the edges start to set.

Add Filling
Once the edges are set, add the sautéed vegetable mixture evenly over one half of the omelette. Sprinkle the shredded cheddar cheese on top of the vegetables.

Fold and Finish Cooking
Carefully fold the other half of the omelette over the filling. Cook for an additional 1-2 minutes until the cheese melts and the eggs are fully cooked.

Serve
Slide the omelette onto a plate and cut it in half if desired. Serve warm.

Toast the Bread
While the omelette is cooking, toast the slices of bread until golden brown.

If desired, spread butter on the warm toast before serving.
