Method

Prepare the Batter

  1. 1

    Combine Dry Ingredients

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and a pinch of salt until well combined.

  2. 2

    Mix Wet Ingredients

In another bowl, beat the egg and then add the milk, vanilla extract, and melted butter. Whisk until smooth.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Cook the Pancakes

  1. 4

    Heat the Pan

In a skillet or griddle, heat 1 tablespoon of butter or oil over medium heat until melted and hot.

  2. 5

    Pour the Batter

Using a tablespoon, scoop small amounts of batter onto the hot skillet, creating silver dollar-sized pancakes. Leave space between each pancake.

  3. 6

    Cook Until Bubbles Form

Cook for 1-2 minutes until bubbles form on the surface and the edges look set.

  4. 7

    Flip and Finish Cooking

Carefully flip each pancake and cook for an additional 1-2 minutes until golden brown and cooked through.

  5. 8

    Repeat and Serve

Remove pancakes from the skillet and keep warm. Repeat with remaining batter, adding more butter or oil as needed. Serve warm.
