Prepare the Batter

Combine Dry Ingredients
In a medium mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and a pinch of salt until well combined.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
Cook the Pancakes

Heat the Pan
In a skillet or griddle, heat 1 tablespoon of butter or oil over medium heat until melted and hot.

Using a tablespoon, scoop small amounts of batter onto the hot skillet, creating silver dollar-sized pancakes. Leave space between each pancake.

Cook for 1-2 minutes until bubbles form on the surface and the edges look set.
