Prepare the Beets

Wash the beets thoroughly under cold running water to remove any dirt. Trim off the tops and roots, then peel the beets with a vegetable peeler or knife. Cut the beets into small cubes for easier blending.

Prepare the Carrots

Wash the carrots under cold water. Peel the carrots and cut them into small chunks to match the size of the beet cubes.

Juicing the Lemon

Cut the lemon in half and using a citrus juicer or your hands, squeeze the juice from both halves into a small bowl, removing any seeds.

Combine Ingredients

In a blender, combine the cubed beets, carrot chunks, lemon juice, and water. If you prefer a sweeter taste, add honey or agave syrup to your liking.

Blend Until Smooth

Blend the mixture on high speed for about 2-3 minutes or until the mixture is completely smooth. If the mixture is too thick, add a little more water to reach your desired consistency.

Serving

Serve Chilled or Over Ice

Pour the blended mixture into glasses. You can serve it chilled or over ice for a refreshing drink. Garnish with a lemon wedge or a sprig of mint if desired.
