Method

Pancake Batter Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In another bowl, mix the milk, pumpkin puree, egg, and vanilla extract until smooth.

  3. 3

    Combine Both Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are okay.

  4. 4

    Prepare the Pan

In a skillet, melt the butter over medium heat. Once melted, reduce the heat to low and let it slightly cool.

Cooking Pancakes

  1. 5

    Cook the Pancakes

Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes or until golden brown.

  2. 6

    Keep Warm

Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining batter.

Cinnamon Cream Cheese Icing Preparation

  1. 7

    Mix Cream Cheese and Sugar

In a medium bowl, beat the cream cheese until smooth. Gradually add in the powdered sugar and mix until well combined.

  2. 8

    Add Milk and Cinnamon

Stir in the milk and cinnamon until the icing is smooth and creamy.

Serving

  1. 9

    Plate the Pancakes

Stack the pancakes on a plate and drizzle with the cinnamon cream cheese icing.

  2. 10

    Add Toppings

Sprinkle granola on top and serve with maple syrup on the side.
