Pancake Batter Preparation

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

Combine Both Mixtures
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; lumps are okay.

Cooking Pancakes

Cook the Pancakes
Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes or until golden brown.

Keep Warm
Transfer cooked pancakes to a plate and cover with a clean kitchen towel to keep warm while you cook the remaining batter.

Mix Cream Cheese and Sugar
In a medium bowl, beat the cream cheese until smooth. Gradually add in the powdered sugar and mix until well combined.

Plate the Pancakes
Stack the pancakes on a plate and drizzle with the cinnamon cream cheese icing.

Sprinkle granola on top and serve with maple syrup on the side.
