Method

Preparation

  1. 1

    Mix Dry Ingredients

In a large mixing bowl, combine the pumpernickel flour, bread flour, cocoa powder, instant yeast, salt, and caraway seeds. Mix well to ensure all dry ingredients are evenly distributed.

  2. 2

    Combine Wet Ingredients

In a separate bowl, mix the warm water, molasses, and vegetable oil until well combined.

Dough Formation

  1. 3

    Combine Wet and Dry Ingredients

Gradually pour the wet ingredient mixture into the dry ingredients while stirring with a wooden spoon or spatula until a shaggy dough forms.

  2. 4

    Knead the Dough

Transfer the dough onto a floured surface. Knead the dough for about 10 minutes until it becomes smooth and elastic. If the dough is too sticky, sprinkle a little more flour as needed.

Rising and Baking

  1. 5

    First Rise

Place the kneaded dough into a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it has doubled in size.

  2. 6

    Shape the Loaf

Once risen, punch down the dough to release any air bubbles. Shape the dough into a loaf by flattening it slightly and rolling it tightly. Pinch the seams to seal.

  3. 7

    Second Rise

Place the shaped loaf into a greased loaf pan, cover it again with a damp cloth, and let it rise for another 30-45 minutes.

  4. 8

    Preheat the Oven

Preheat your oven to 375°F (190°C) while the loaf is rising.

  5. 9

    Bake the Bread

Once the loaf has risen, bake it in the preheated oven for about 30-35 minutes or until the loaf sounds hollow when tapped on the bottom and has a deep brown crust.

  6. 10

    Cool the Bread

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
