    Mix Plant-Based Milk and Vinegar

    In a small bowl, combine the almond milk and apple cider vinegar. Let it sit for about 5 minutes to create a vegan buttermilk.

    Combine Dry Ingredients

    In a large mixing bowl, whisk together the gluten-free all-purpose flour, baking powder, salt, and sugar until well combined.

    Add Wet Ingredients

    Pour the vegan buttermilk mixture, vegetable oil, and vanilla extract into the dry ingredients. Stir gently until just combined. Do not overmix; a few lumps are okay.

Cooking

    Preheat the Pan

    Heat a non-stick skillet or griddle over medium heat. Lightly grease with a bit of vegetable oil if needed.

    Pour Batter

    Using a 1/4 cup measure, pour batter onto the hot skillet. If desired, top with fresh blueberries or sliced bananas at this point.

    Cook Pancakes

    Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip carefully and cook for another 2-3 minutes until golden brown.

    Serve

    Remove pancakes from the skillet and keep warm while you repeat with the remaining batter. Serve warm topped with sliced strawberries, additional blueberries, chopped pecans, and a drizzle of maple syrup.
