Prepare the French Toast

Make the Egg Mixture
In a medium bowl, whisk together eggs, milk, vanilla extract, and ground cinnamon until well combined.

Cook the French Toast
Heat a large skillet over medium heat and add 1 tablespoon of butter. Dip each slice of Texas toast into the egg mixture, allowing excess to drip off. Once the butter is melted, add the dipped toast to the skillet and cook until golden brown on both sides (about 3-4 minutes per side). Repeat for the remaining slices.
Assemble the Monte Cristo

Layer the Filling
Place two slices of the cooked French toast on a plate. On one slice, layer ham and Swiss cheese, then top with the second slice of French toast.
Optional Potatoes

Prepare the Potatoes
Dice the potatoes into small cubes, toss them with olive oil, salt, and pepper. Spread them on a baking sheet and bake at 400°F (200°C) for about 25-30 minutes until crispy.
