Prepare the batter
In a mixing bowl, whisk together the flour, baking powder, sugar, and salt until well combined.

Combine wet and dry ingredients
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

Heat the skillet
Heat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt.

Cook the pancakes
Using a small ladle or spoon, pour small rounds of batter onto the skillet. Cook until bubbles form on the surface, about 2 minutes, then flip and cook for another 1-2 minutes until golden brown.

Serve warm with maple syrup drizzled on top.

Prepare the egg mixture
In a shallow bowl, whisk together the egg, milk, vanilla extract, and cinnamon until well combined.

Heat a skillet over medium heat and add 1 tablespoon of butter. Dip each slice of bread into the egg mixture, coating both sides well.
