Tea Base

Method

Preparation

  1. 1

    Prepare the spices

In a mortar and pestle, lightly crush the cardamom pods and black peppercorns to release their flavors. Set aside.

Brewing

  1. 2

    Combine water and spices

In a medium-sized pot, add the 4 cups of water, cinnamon sticks, cloves, sliced ginger, crushed cardamom pods, and black peppercorns. Bring to a boil over medium heat.

  2. 3

    Infuse the tea

Once boiling, reduce the heat and simmer for about 10 minutes to allow the spices to infuse their flavors into the water.

  3. 4

    Add black tea leaves

After 10 minutes, add the black tea leaves to the pot and let it steep for an additional 5 minutes.

  4. 5

    Strain the tea

Using a fine mesh strainer, strain the tea mixture into a large bowl or pitcher to remove the spices and tea leaves.

Final Touches

  1. 6

    Add milk and sweetener

Return the strained tea to the pot. Add the 2 cups of milk and stir well. If you prefer a sweeter chai, add the sugar or sweetener at this stage.

  2. 7

    Heat through

Warm the chai over low heat, stirring gently until heated through, but do not let it boil.

Serving

  1. 8

    Serve hot

Pour the house-made chai tea into mugs and serve hot. Enjoy your warming cup of chai!
