Method

Preparing the Vegetables

    Roasting the Vegetables

    Preheat the oven to 400°F (200°C). Cut the cauliflower, broccoli, carrots, cabbage, radishes, and beets into bite-sized pieces. Place them on a baking sheet.

    In a small bowl, mix the minced garlic, grated ginger, olive oil, salt, and pepper. Drizzle the mixture over the vegetables and toss to coat evenly.

    Roasting

    Roast the vegetables in the preheated oven for 25-30 minutes, or until they are tender and slightly caramelized, stirring halfway through.

Cooking the Grains

    Cooking Brown Rice

    In a medium saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes, or until the rice is tender and water is absorbed.

    Boiling Red Skin Potatoes

    In a separate pot, place the red skin potatoes and cover with water. Bring to a boil and cook for about 15-20 minutes, or until they are fork-tender. Drain and let cool slightly before dicing.

    In a bowl, layer the cooked brown rice at the bottom, followed by the roasted vegetables and diced red skin potatoes.

    Top with the prepared vegan eggs, sprinkle vegan cheese on top, and add sliced avocado. Season with additional salt and pepper if desired.
