    Preheat the Oven

    Preheat your oven to 350°F (175°C) to prepare for baking the oatmeal.

    Mix Dry Ingredients

    In a large mixing bowl, combine rolled oats, dried cherries, raisins, ground cinnamon, baking powder, and salt. Mix well to evenly distribute the ingredients.

    Mix Wet Ingredients

    In another bowl, whisk together vanilla soy milk, maple syrup (or honey), eggs, and vanilla extract until well combined.

    Combine Mixtures

    Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is just combined, being careful not to overmix.

    Prepare Baking Dish

    Lightly grease a 9x9 inch (or equivalent) baking dish with cooking spray or a small amount of oil. Pour the oatmeal mixture into the prepared baking dish and spread it evenly.

Baking

    Bake the Oatmeal

    Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden and the edges are set.

    Cool and Serve

    Once baked, remove the dish from the oven and let it cool for a few minutes. Cut into squares and serve warm with your choice of steamed milk.
