Preparing the Muffins and Ham

    Toast the Muffins

    Halve the English muffins and toast them until golden brown.

    Grill the Ham

    In a skillet over medium heat, grill the thick-cut ham slices until they are heated through and slightly browned, about 2-3 minutes per side.

Poaching the Eggs

    Prepare Water

    Fill a large saucepan with water and bring it to a gentle simmer over medium heat.

    Poach the Eggs

    Crack each egg into a small bowl. Create a gentle whirlpool in the simmering water using a spoon, then carefully slide the eggs into the center. Poach the eggs for about 3-4 minutes for soft yolks. Remove with a slotted spoon and let drain on a paper towel.

Making the Hollandaise Sauce

    Melt the Butter

    In a small saucepan, melt the unsalted butter over low heat until it is completely melted and just starting to simmer.

    Combine Ingredients

    In a bowl, whisk together the egg yolks, lemon juice, salt, and cayenne pepper until well combined.

    Emulsify the Sauce

    Slowly drizzle the melted butter into the egg mixture while whisking vigorously to create an emulsion. Continue whisking until the sauce is thick and creamy. If it is too thick, you can add a teaspoon of warm water to reach desired consistency.

Assembling the Eggs Benedict

    On each toasted English muffin half, place a slice of grilled ham, followed by a poached egg.
